Ensalada de Frijoles Con Maiz Asado

Ingredients

  • 2 Tbsp. vegetable oil
  • 2 garlic
  • 3/4 cup chopped red onion
  • 1 package (10 oz.) frozen whole kernel corn [or 1 can (15 oz.) whole kernel corn, drained]
  • 1 tsp. ground cumin
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1/2 cup Hellmann's® or Best Foods® Mayonnaise with Lime Juice
  • 2 plum tomatoes, seeded and chopped
  • 1 jalapeno pepper, seeded and chopped
  • 3 Tbsp. chopped fresh cilantro
  • 1/4 tsp. salt

Directions

  1. In large nonstick skillet, heat oil over medium-high heat and cook garlic, onion, corn and cumin, stirring occasionally, 5 minutes or until onion is tender. Remove from heat. Stir in remaining ingredients. Serve warm or chill.     Mayonnaise blended with 1 to 2 tablespoons lime juice.
