Garden Chicken Salad

Ingredients

  • 1/4 cup Hellmann's® or Best Foods® Low Fat Mayonnaise Dressing
  • 2 Tbsp. milk
  • 2 Tbsp. chopped green onions
  • 1 Tbsp. lemon juice
  • 1 tsp. sugar
  • 1/2 tsp. grated lemon peel (optional)
  • 1/8 tsp. ground black pepper
  • 5 cups assorted cut-up fresh vegetables (bell peppers, carrots, cherry tomatoes, cucumber and/or snow peas)
  • 6 cups torn lettuce leaves
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.), grilled or broiled and sliced*

Directions

  1. Combine Hellmann's® or Best Foods® Low Fat Mayonnaise Dressing, milk, green onions, lemon juice, sugar, lemon peel and black pepper in small bowl; set aside.
  2. Arrange vegetables on lettuce-lined platter, then top with sliced chicken. Serve with dressing.

*Use 3/4 lb. sliced cooked chicken (about 2-1/2 cups).
