Edamame Guacamole

Ingredients

  • 6 ounces edamame
  • 1/2 cup nonfat sour cream
  • 3 Tbsp. Hellmann's® or Best Foods® Light Mayonnaise
  • 1/4 cup fresh cilantro
  • 2 tsp. lime juice
  • 1/2 tsp. hot pepper sauce*
  • 1 clove garlic, finely chopped
  • 3/4 cup chopped tomato
  • 1/4 cup chopped red onion
  • 4 snack-size whole wheat pita breads, each cut into 6 wedges and toasted
  • 10 cherry tomatoes, halved
  • 1 medium carrot, cut into thin strips

Directions

  1. Prepare edamame according to package directions, omitting salt. Drain, then chill.
  2. Process edamame, sour cream, Hellmann's® or Best Foods® Light Mayonnaise, cilantro, lime juice, hot pepper sauce and garlic in food processor until smooth. Stir in chopped tomato and onion.
  3. Serve with pita wedges, cherry tomatoes and carrot.
