Tofu Garden Salad Sandwiches

Ingredients

  • 1 container (12.3 oz.) extra firm tofu, diced
  • 2 Tbsp. balsamic vinaigrette dressing
  • 1/4 cup Hellmann's® or Best Foods® Light Mayonnaise
  • 1/2 tsp. salt
  • 1/2 cup shredded carrot
  • 1/2 cup finely chopped cucumber
  • 1/2 cup chopped tomato
  • 1/4 cup finely chopped celery
  • 4 whole wheat pita breads, halved
  • 4 slices Muenster cheese or cheddar cheese, halved

Directions

  1. Combine tofu with dressing in small bowl; let stand 15 minutes.
  2. Meanwhile, combineHellmann's® or Best Foods® Light Mayonnaise with salt in large bowl. Stir in carrots, cucumber, tomato and celery. Gently fold in tofu. Evenly spoon tofu mixture into pitas, then add cheese. Garnish, if desired, with bean sprouts.
