Herb Grilled Vegetable Sandwiches
- 1/2 cup Hellmann's® Real Whipped Tangy Dressing*
- 1 clove garlic, chopped
- 1 tsp. fresh rosemary leaves
- 1 small eggplant, cut into 1/2-inch-thick slices
- 2 portobello mushrooms
- 1 medium sweet onion, cut into 1/2-inch-thick slices
- 4 ciabatta or Italian rolls, split
- 4 ounces sliced mozzarella cheese
- Combine Hellmann's® Real Whipped Tangy Dressing, garlic and rosemary in small bowl; reserve 1/2 of the mixture.
- Grill eggplant, mushrooms and onion, turning once and brushing with remaining dressing mixture, until vegetables are tender, about 10 minutes ; slice mushrooms.
- Evenly spread reserved dressing mixture on rolls. Arrange eggplant, mushrooms and onion on rolls, then top with cheese.
