Herb Grilled Vegetable Sandwiches

Ingredients

  • 1/2 cup Hellmann's® Real Whipped Tangy Dressing*
  • 1 clove garlic
  • 1 tsp. fresh rosemary leaves
  • 1 small eggplant, cut into 1/2-inch-thick slices
  • 2 portobello mushrooms
  • 1 medium sweet onion, cut into 1/2-inch-thick slices
  • 4 ciabatta or Italian rolls, split
  • 4 ounces sliced mozzarella cheese

Directions

  1. Combine Hellmann's® Real Whipped Tangy Dressing, garlic and rosemary in small bowl; reserve 1/2 of the mixture.
  2. Grill eggplant, mushrooms and onion, turning once and brushing with remaining dressing mixture, until vegetables are tender, about 10 minutes ; slice mushrooms.
  3. Evenly spread reserved dressing mixture on rolls. Arrange eggplant, mushrooms and onion on rolls, then top with cheese.
