Grilled Summer Chicken Thighs

Ingredients

  • For Brine:
  • 1 gallon warm water
  • 1/2 cup salt
  • 4 cloves garlic, smashed
  • For Chicken:
  • 2 cups Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil
  • 4 bone-in chicken thighs
  • 1/2 cup orange juice
  • 3 Tbsp. Chef Tim Love Poultry Rub*
  • Kosher salt and cracked black pepper (to taste)

Directions

  1. For brine, mix water, salt, and garlic in large bowl or pot. Add chicken; place in the refrigerator and soak for at least 1 hour or up to 16 hours.
  2. For chicken, heat grill to high. Mix together the Hellmann’s® Mayonnaise Dressing with Olive Oil, orange juice, and poultry rub in large bowl. Add chicken thighs to this mix and marinate for 30 minutes. Remove chicken from marinade and season with salt and pepper.
  3. Place chicken on the grill skin side down first. Cook for approximately 7 minutes on each side with the lid closed or until a thermometer reads 165°.
  • Tip: Any good poultry rub can be used.
