Ingredients

  • SUCCOTASH:
  • 4 poblano peppers, roasted and sliced
  • 1 pint cherry tomatoes, halved and sautéed
  • 1 cup corn kernels , sautéed until caramelized
  • 1 frozen fava beans or lima beans , cooked
  • 1/2 cup chopped red onion, sautéed
  • 2 Tbsp. fresh thyme leaves
  • SPICED BASIL MAYO:
  • 1 1/2 cups Hellmann's® or Best Foods® Real Mayonnaise
  • 1 cup fresh basil leaves, chopped
  • 2 Tbsp. fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp. cumin seeds, toasted and ground
  • 1/2 tsp. ground cayenne pepper
  • ASSEMBLY:
  • 4 ciabatta rolls, buttered and toasted
  • 2 cups arugula
  • 8 ounces fresh burrata, cut into 4 slices
  • 8 slices crisp-cooked thick cut bacon

Directions

  1. For Succotash, combine all ingredients in a bowl. Season with salt and pepper if desired.
  2. For Spiced Basil Mayo, combine all ingredients in another bowl. Season with salt and pepper if desired.
  3. For Assembly, slather spiced basil mayo on toasted ciabatta rolls. Top each bottom with a few arugula leaves, a hefty scoop of succotash, 1 slice burrata and 2 slices bacon. Top with roll tops and enjoy!
