Ingredients

  • CITRUS PICKLED ONIONS:
  • 2 cups thinly sliced red onions
  • 1/2 cup grapefruit juice
  • 1/2 cup orange juice
  • 1/2 cup fresh lime juice
  • 1 Tbsp. sugar
  • 2 tsp. salt
  • 1 tsp. ground cumin
  • PORK:
  • 1/4 cup orange juice
  • 1/4 cup fresh lime juice
  • 2 Tbsp. achiote powder
  • 2 tsp. ground cumin
  • 2 -lb. pork shoulder or butt
  • 2 tsp. salt
  • 3/4 cup chicken stock or chicken broth
  • 1 large white onion, thinly sliced
  • 6 cloves garlic, peeled and smashed
  • CHARRED PINEAPPLE TOMATILLO SALSA:
  • 1 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 1 jar (8 oz.) tomatillo salsa
  • 1/4 cup chopped charred pineapple
  • FOR ASSEMBLY:
  • 4 Cuban rolls, sliced in half
  • 1/4 cup chopped fresh cilantro
  • 1 cup crumbled queso fresco
  • 1 avocado, sliced (optional)

Directions

  1. For Citrus Pickled Onions, combine all ingredients in a jar. Cover and refrigerate overnight.
  2. For Pork, combine juices, achiote and cumin in a small bowl to make a paste. Season pork shoulder with salt and, using gloves, rub achiote mixture all over the pork. Marinate in the refrigerator a few hours or preferably overnight.
  3. Preheat oven to 300°. Place marinated pork shoulder in a Dutch oven along with stock, onion and garlic. Cover and bake until tender, 3 to 4 hours. Once cooked, allow to cool enough to handle. Shred with two forks.
  4. For Charred Pineapple Salsa, in a bowl mix together Hellmann's® or Best Foods® Real Mayonnaise, salsa and pineapple. Season with salt and pepper.
  5. For Assembly, slather the insides of Cuban rolls with charred pineapple tomatillo salsa. Top with pork , pickled onions, cilantro, and queso fresco. Griddle or use a panini press to heat and brown.
