Choose a base
Eggs, cheese

Use up your vegetables & fruit
Red peppers, onion, tomato, spinach, mushrooms, green onions- any veggies left in the frig will do!

Add a protein
Veggie sausage or turkey bacon

Bring it al together and then add the magic touch
Whisk 8 eggs, ½ cup of cheese, salt and pepper. Quickly fry 2 cups of vegetables and 1 cup of cooked protein in skillet. Pour the egg mixture into the pan and let cook with a lid on over low heat. Add the magic touch. (Choose some Mayonnaise, a handful of herbs like parsley, basil or chives or some red or green pesto.)
