Directions
-
Pick your base: Bread. Any day old or stale bread will do. Simply cut into cubes.
-
Grab your fruit: Bananas
-
Add your protein: Eggs and milk
-
Add the magic touch: Sugar, butter, vanilla extract and cinnamon. Bring it all together by preheating oven to 375° and placing 4 cups cubed bread and 2 sliced medium bananas in a lightly greased 2-qt. baking dish. In large bowl whisk together 2 eggs and 1/4 cup Mayonnaise until smooth. Then whisk in 2 cups milk, 1/2 cup sugar, 1/4 cup melted butter, 2 tsp. vanilla extract and 1/2 tsp cinnamon. Pour over bread and press lightly to completely submerge bread cubes. Bake 50 minutes or until golden brown and center is set but still slightly jiggly.
-
Optional magic touch: Before adding egg mixture sprinkle top with 1/4 cup semi-sweet chocolate chips, 1/4 cup dried cranberries and/or 1/4 cup chopped walnuts or pecans.
-
Enjoy!
