1/4 cup finely chopped fresh basil leaves
Grated peel and juice of 1 lemon
2 Tbsp. minced fresh chives
Ground cayenne pepper (optional)
PATTIES:
4 Tbsp. olive oil, divided
1 portobello mushroom, stemmed and minced
4 ounces sun-dried tomatoes packed in oil, drained and minced
3/4 cup minced onion
1 can (15 oz.) black beans, rinsed and drained
1 1/4 cups cooked quinoa
1/4 cup chopped parsley
2 Tbsp. chopped fresh mint
1 tsp. garlic powder
1 tsp. ground coriander
1 tsp. ground cumin
Hot sauce to taste
FOR ASSEMBLY:
1 head Bibb lettuce
8 slices cucumber
1 avocado, sliced
1 cup shredded carrots
1 cup shredded fresh beets
